Almond Vanilla Cookies
(From the kitchen of Joe Tornatzky, alleged Hungarian)
1/2 lb sweet butter
2 C. flour (white, general purpose)
1/4 lb. ground blanched almonds
1/2 C granulated sugar.
1 vanilla bean
1 lb confectioner’s sugar (you won’t use all this, but read below!!)
Combine butter, ground almonds, sugar, and flour. Roll into dough about 1/4 about 1/4 inch thick. Cut into artful, bizzare, or lewd shapes. Bake on cookie sheet (ungreased or very lightly greased) for 15 minutes at 350. Cool on rack.
Now the fun part. Take vanilla bean and beat it into a flavorful dust with your trusty mortar and pestle (the antique brass ones work best). Mix the ground vanilla bean withe the confectioner’s sugar in a plastic bag. Sift the vanilla flavored sugar on the cookies. These taste even better when they are allowed to age a week or two in a cookie tin.
